Fitting 18's is different because the 18" wheel on a low profile tire is undersized to begin with when it comes to SC's; most people do 18" and low profiles on stock body because 1. it's the easy way to "slam" the car super low, 2. it's cheaper, 3. with a stock body you can slam any car with undersized wheels, but it won't fill the fender and from the side view the wheels will look too small - but then again, everyone has their preference.
With an 18x10 ET20 if you want the car to sit flush height you will need all 3 tricks - stretch tire, fender roll and fender pull. There is no way around it unless you want to ride with a 1" gap between fender and tire for clearance without scraping... but then that won't look right because the fenders on an SC are big, and if you're running an undersized 18" with a low profile tire, it won't look right unless it's flush height.
18x9 ET25 up front is manageable, but again - it depends on ride height. Fender roll for sure, since the front wheels need some space when turning.
For a 9" front a 245/40 will be semi-square, so it might cause rubbing issues.
For a 10" rear, 275 will be square, 265 slightly square.
Note that the way a tire stretches is not just dependent on tire sizing, but also brand and model of tire. Some brand tires stretch nicely and give good clearance, other brand tires don't stretch as much due to sidewall design.
